Ingredients

Chicken Bites:

  • 1 lb boneless, skinless chicken breast (cut into bite-sized pieces)
  • ½ cup buttermilk (or plain yogurt)
  • ¾ cup cornstarch
  • ½ tsp garlic powder
  • ½ tsp paprika
  • Salt & pepper to taste
  • Oil for frying

Bang Bang Sauce:

  • ½ cup mayonnaise
  • 2 tbsp sweet chili sauce
  • 1 tbsp sriracha
  • 1 tbsp honey (optional for added sweetness)
  • 1 tsp rice vinegar or lime juice

Garnish:

  • Chopped green onions
  • Sesame seeds (white & black)

Instructions

1. Marinate Chicken

  • Toss chicken with buttermilk. Let sit 10 minutes while prepping sauce.

2. Make Bang Bang Sauce

  • In a bowl, whisk together mayo, chili sauce, sriracha, honey, and vinegar. Set aside.

3. Coat & Fry

  • Mix cornstarch, garlic powder, paprika, salt, and pepper in a bowl.
  • Coat marinated chicken in dry mix.
  • Deep-fry in hot oil (350°F) until golden and crispy, about 4–5 minutes. Drain on paper towels.

4. Toss & Garnish

  • While still warm, toss chicken in bang bang sauce or drizzle over top.
  • Garnish with green onions and sesame seeds. Serve hot.
